  • 1 cup coconut milk or light cream Creates a creamy consistency that balances the spices.
  • 2–3 cups cooked leftover turkey, chopped The star of the dish, providing protein and heartiness.
  • 1 teaspoon salt Essential for bringing out flavors.
  • ½ teaspoon black pepper Adds a touch of heat.
  • ½ cup peas or diced bell peppers (optional) Add color and texture.

Preparation

  • Heat the oil in a large pan over medium heat. Cook the onion, stirring occasionally, until soft and lightly golden, about 5-7 minutes.
  • Stir in the minced garlic and grated ginger, cooking for about 1-2 minutes until fragrant.
  • Add the curry powder, cumin, and turmeric to the pan. Stir gently for 1 minute.
  • Incorporate the tomato paste, mixing thoroughly with the spiced onion base. Pour in the turkey or chicken stock and coconut milk, stirring until smooth.
  • Stir in the chopped leftover turkey and any optional vegetables if desired.
  • Lower the heat and let the curry simmer for 15-20 minutes.
  • Taste and adjust seasoning with salt and black pepper as needed. Garnish with fresh cilantro or parsley, and serve warm.

Notes

Serve this curry over steaming white or basmati rice or with naan. Store leftovers in the refrigerator for up to 3-4 days or freeze for 2-3 months.
