  • ½ cup milk or cream For a creamy finish.
  • 1 teaspoon salt (adjust to taste) Enhances overall flavor.
  • ½ teaspoon black pepper Adds a hint of warmth.
  • ½ teaspoon dried thyme or poultry seasoning For earthy, herbaceous notes.
  • 1 cup frozen peas (optional) For added color and nutrition.
  • ¾ cup grated Parmesan or mild cheddar Melts beautifully for that ooey-gooey topping.
  • ½ cup breadcrumbs mixed with 2 tablespoons melted butter For that tasty, crisp topping.

Preparation

  • Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  • Melt butter in a pan, add onion, carrots, and celery, and cook until soft, about 5 minutes.
  • Stir in minced garlic, then sprinkle the flour and cook briefly to eliminate the raw taste, about 1 minute.
  • Slowly whisk in the stock and milk, stirring continuously until thick and smooth, about 3-5 minutes.
  • Add salt, pepper, and thyme. Taste to balance flavors, adjusting seasoning as needed.
  • Stir in the leftover turkey, peas (if using), and the cooked rice or pasta, mixing evenly.
  • Transfer the turkey mixture to the prepared baking dish and spread it evenly.
  • Sprinkle cheese over the top, then layer the breadcrumbs mixed with butter.
  • Bake uncovered for 30–35 minutes until bubbling and golden.
  • Let the casserole rest for 5–10 minutes before serving.

Notes

Letting the casserole sit allows it to set, making serving easier. For crispy breadcrumbs, try broiling for the last few minutes of baking.
