Preparation

  • Heat the olive oil in a large Dutch oven over medium-high heat.
  • Add the ground sausage and diced onions; cook for about 8 minutes until the sausage is browned and onions are tender.
  • Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  • Add the chicken broth, diced tomatoes, fire roasted tomatoes, tomato paste, bay leaves, oregano, basil, salt, black pepper, and optional cayenne. Bring the mixture to a boil.
  • Stir in the broken lasagna noodles and boil gently for about 15 minutes, or until the noodles are tender. Adjust the liquid with additional water or broth as needed.
  • Stir in the minced parsley and boil for another minute until wilted.
  • Taste the soup and adjust the seasoning if necessary; then remove the bay leaves.
  • Preheat your oven to the broiler setting.
  • Ladle the soup into oven-safe bowls, top with mozzarella and parmesan cheese. Broil for about 1 minute until the cheese is melted and golden brown. Serve immediately.
  • Store any ungarnished leftovers in the fridge for 5-7 days or freeze for up to 4 months.

Notes

Start with high-quality sausage for the best flavor and allow the onion and sausage to get a golden color. Adjust the spiciness by adding cayenne to taste. Broiling the cheese is essential for a creamy, cheesy finish.
