Main Ingredients

  • 12 oz Lasagna Noodles Cook according to package directions.
  • 15 oz Ricotta Cheese
  • 2 cups Shredded Mozzarella Cheese Divided for filling and topping.
  • 1/2 cup Grated Parmesan Cheese
  • 2 cups Fresh Spinach Chopped.
  • 1 cup Marinara Sauce Plus more for spreading on top.
  • 1 tbsp Italian Seasoning
  • to taste Salt and Pepper

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Cook lasagna noodles according to package directions until al dente. Drain and lay them flat.
  • In a bowl, combine ricotta, half of the mozzarella, spinach, Italian seasoning, salt, and pepper.

Cooking/Asemble

  • Spread a thin layer of marinara sauce on the bottom of a baking dish.
  • On each noodle, place a spoonful of the ricotta mixture. Roll it up tightly!
  • Place the roll-ups seam-side down in the baking dish. Cover with the rest of the marinara and sprinkle the remaining mozzarella on top.
  • Cover with foil and bake for 25 minutes.

Serving

  • Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  • Let cool slightly before serving. Enjoy the warm, gooey perfection!

Notes

For best results, don't overfill noodles, and let roll-ups rest before serving. Substitute sautéed mushrooms for spinach or use no-boil lasagna noodles for time-saving. Store leftovers in airtight containers for up to 3 days.
