Preparation

  • Step 1: Sauté aromatics. To a large Dutch oven or stockpot, add the olive oil, onion, and celery; sauté over medium-high heat for about 7 minutes, or until vegetables begin to soften, stirring intermittently.
  • Step 2: Add cabbage. Add the cabbage and sauté for about 3 minutes, until wilted and softened.
  • Step 3: Add garlic. Add the garlic and sauté for another 1 to 2 minutes, until fragrant.
  • Step 4: Pour in broth. Pour in the chicken broth, add the shredded chicken, cannellini beans, parsley, oregano, salt, and pepper; boil for about 5 minutes, or until chicken is warmed through.
  • Step 5: Stir in greens. Stir in the kale, zucchini, and optional lemon juice; boil for 1 to 2 minutes, until kale has wilted and zucchini has softened.
  • Step 6: Taste and adjust. Taste and adjust seasoning as needed. If the soup is too thick, add water to reach desired consistency. Serve immediately.

Notes

For the best results, use freshly shredded chicken for enhanced flavor. Adjust the thickness of your soup based on your preference and serve with crusty bread for an ideal comfort food experience.
