Preparation

  • Preheat your oven to 400°F (200°C).
  • Slice the medium yellow onions into 1/4-inch rings and grate the small yellow onion.
  • Chop the parsley leaves and mince the garlic cloves.
  • In a large bowl, combine ground lamb, breadcrumbs, grated small onion, egg, minced garlic, Baharat, ground cardamom, and a generous pinch of kosher salt and black pepper.
  • Mix until just combined, being careful not to overwork the meat.

Cooking

  • In a skillet, heat 3 tablespoons of extra virgin olive oil over medium heat.
  • Add the sliced onions and season with a pinch of salt. Cook for about 15-20 minutes, stirring occasionally, until they are beautifully caramelized and golden brown.
  • While the onions cook, form the lamb mixture into meatballs, approximately 1 inch in diameter.
  • Once the onions are ready, transfer them to a baking dish, spreading them evenly across the bottom. Place the lamb meatballs on top of the onions.
  • Bake in the preheated oven for 20-25 minutes or until the meatballs are cooked through and reach an internal temperature of 160°F (71°C).

Serving

  • Remove the dish from the oven and let it sit for a few minutes.
  • Garnish the meatballs with the chopped parsley for a fresh touch.
