Main ingredients

  • 1/2 cup Feta Cheese Crumbled.

Preparation

  • In a bowl, combine the lemon juice, minced garlic, oregano, olive oil, salt, and pepper to create the marinade.
  • Add the chicken breasts to the marinade, ensuring they are evenly coated.
  • Let the chicken marinate for at least 30 minutes in the refrigerator to enhance flavor.

Cooking

  • Preheat your grill or skillet over medium-high heat.
  • Remove the chicken from the marinade and discard the leftover marinade.
  • Cook the chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F (74°C).
  • During the last few minutes of cooking, sprinkle feta cheese on top of the chicken and allow it to melt slightly.

Serving

  • Once cooked, remove the chicken from heat and let it rest for 5 minutes.
  • Slice and serve with a garnish of fresh herbs like parsley or additional feta, if desired.

Notes

Marinate the chicken overnight for deeper flavor. For extra juiciness, pound the chicken breasts to an even thickness before marinating. Store leftovers in an airtight container in the fridge for up to 3 days. Serve with a fresh salad or whole grains for a complete meal.
