Preparation

  • Wash and peel the sweet potatoes. Cut them into 1-inch cubes.
  • Slice the onion thinly.

  • In a large bowl, mix the brown sugar and soy sauce to create a marinade.

Cooking

  • In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent.
  • Add the cubed sweet potatoes to the skillet and toss them with the onions for 3-4 minutes.
  • Transfer the sweet potato mixture to a greased baking dish, then place the seasoned chicken breasts on top.
  • Pour the brown sugar and soy sauce mixture over everything, ensuring the chicken is well coated.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the sweet potatoes are tender.

Serving

  • Remove from the oven and let it rest for 5 minutes.

Notes

Marinate the chicken for at least 30 minutes for extra flavor. Swap olive oil with avocado oil for a higher smoke point. Use fresh, seasonal sweet potatoes for best taste.
