Instructions
 

Prep

  • Dice the pineapple and red onion into small, even pieces for a balanced salsa.
  • Chop the cilantro finely and juice the lime; set aside.
  • Rub the chicken breasts with jerk seasoning and olive oil.
  • Prepare rice according to package instructions.

Cook/Assemble

  • Heat a grill pan or skillet over medium-high heat and cook the seasoned chicken for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
  • Mix diced pineapple, red onion, cilantro, and lime juice in a bowl. Season with salt and pepper to taste.
  • Fluff rice with a fork and season lightly with salt.

Serve

  • Let the chicken rest for a couple of minutes before slicing it into strips.
  • In bowls, layer fluffy rice, sliced jerk chicken, and top generously with pineapple salsa.
  • Serve immediately with lime wedges.

Notes

For best results, marinate chicken overnight in jerk seasoning, and let salsa sit for 10 minutes before serving. Store leftovers in airtight containers for up to 3 days.
