  • 4 pieces Chicken Breasts Juicy and tender when marinated.
  • 1/2 cup Jerk Marinade Adds a spicy kick.
  • 2 cups Cooked Fluffy Rice Base to soak up flavors.
  • 1 cup Diced Pineapple Sweet and refreshing.
  • 1/4 cup Diced Red Onion Adds crunch.
  • 1/4 cup Chopped Cilantro Freshness for the dish.
  • 2 tablespoons Lime Juice Brightens the flavors.
  • to taste Salt and Pepper Enhances the dish.

Instructions
 

Preparation

  • Gather all your ingredients on your kitchen counter.
  • Marinate the chicken in jerk seasoning for at least 15 minutes.
  • While the chicken is marinating, cook your rice according to package instructions.

Cooking

  • Heat a grill pan over medium heat. Once hot, add the marinated chicken.
  • Cook the chicken for about 6–7 minutes on each side or until cooked through and no longer pink.
  • While chicken is cooking, mix diced pineapple, red onion, cilantro, and lime juice in a bowl to make the salsa.

Serving

  • Slice the chicken and place it on top of a bed of cooked rice.
  • Generously spoon the fresh pineapple salsa over the chicken.
  • Serve immediately with extra lime wedges if desired.

Notes

Marinate longer for maximum flavor. Use fresh pineapples for better texture. Can swap jerk seasoning for a milder marinade. Store leftovers in an airtight container for up to 3 days.
