Preparation

  • Preheat your oven to 320°F (160°C).
  • Prepare an 8-inch round cake pan by lining it with parchment paper.
  • In a mixing bowl, blend cream cheese until smooth and creamy, about 1-2 minutes.
  • Add in the sugar and beat until combined, then mix in the eggs one at a time.
  • Stir in milk, melted butter, matcha, vanilla, cornstarch, and salt until the mixture is smooth.

Cooking

  • Pour the cheesecake mixture into the prepared cake pan.
  • Place the cake pan into a larger baking dish and fill halfway with hot water to create a water bath.
  • Bake for 50-60 minutes, or until the edges are set but the center is slightly wobbly. It should be golden brown on top.
  • Turn off the oven and leave the cheesecake inside for another 10-15 minutes to cool gradually.

Serving

  • Carefully remove the cheesecake from the water bath and allow it to cool to room temperature.
  • Once cooled, refrigerate for at least 4 hours or overnight for the best flavor and texture.
  • Slice and serve chilled. Top with your favorite fruits or a light dusting of additional matcha for a delightful presentation.

For best results, ensure cream cheese is at room temperature and use a water bath to prevent the cheesecake from cracking. Top with fruits like strawberries or blueberries for added nutrition and flavor.
