Dough

Preparation

  • Heat vegetable oil in a skillet over medium heat.
  • Add chopped onion and sauté until translucent, about 5 minutes.
  • Stir in minced garlic and minced Scotch bonnet or habanero chili. Cook for another 2 minutes until fragrant.
  • Add curry powder, kosher salt, dried thyme, and ground allspice. Mix well.
  • Incorporate ground beef and cook until browned, breaking it apart, about 8-10 minutes.
  • Stir in dried breadcrumbs and beef broth or water, allowing it to thicken, then remove from heat and let cool.

Dough Preparation

  • In a large bowl, combine all-purpose flour, curry powder, and kosher salt.
  • Cut in cold unsalted butter until the texture resembles coarse crumbs.
  • Gradually add cold water and mix until a dough forms. Knead briefly until smooth.
  • Divide the dough into equal portions and roll each piece into a circle, about 6 inches in diameter.
  • Place a generous spoonful of the beef filling in the center of each circle and fold over to create a half-moon shape, sealing the edges.
  • Brush each patty with an egg wash.

Baking

  • Preheat your oven to 375°F (190°C).
  • Arrange the patties on a lined baking sheet with space between them.
  • Bake for 25-30 minutes or until golden brown on top.
  • Cool slightly before serving to allow the filling to set. Serve warm.
