  • 1/2 cup parmesan cheese Nutritional yeast can be a great substitute for vegans.

Instructions
 

Preparation

  • Gather all your ingredients and chop the onion, garlic, and parsley.
  • Remove the casing from the Italian sausage if needed.
  • Measure out the broth and have your canned tomatoes handy.

Cooking

  • In a large pot, heat olive oil over medium heat.
  • Add the diced onion and sauté for 3-4 minutes until softened.
  • Stir in the minced garlic, then add the sausage. Cook until browned.
  • Pour in chicken broth and diced tomatoes; bring to a simmer.
  • Add the ditalini pasta and cook for 8-10 minutes until tender.
  • Stir in the cream and parmesan; season with salt and pepper.

Serving

  • Ladle the soup into bowls.
