  • 4 fillets Thick fish fillets, halibut recommended Ensure fillets are at least 1 inch thick
  • 4 cups Roma tomatoes, seeded and chopped Choose ripe tomatoes for best flavor
  • 1 tablespoon Dried oregano Use fresh oregano for enhanced taste
  • 1 tablespoon Fresh basil, chopped Adjust according to taste
  • 1 teaspoon Salt Add more if needed, depending on preference
  • 1/2 teaspoon Hot pepper flakes Optional, for a bit of heat
  • 2 tablespoons Italian parsley, chopped For garnish and added freshness
  • 3.5 tablespoons Olive oil Divided into two portions for topping and drizzling

Preparation

  • Preheat your oven to 350°F (180°C).
  • In a medium bowl, combine seeded tomatoes, oregano, basil, salt, hot pepper flakes, Italian parsley, and 2 1/2 tablespoons of olive oil, mixing gently.
  • Use parchment paper to line a baking pan for easy cleanup and moisture retention.
  • Place the fish fillets in the pan and top with the tomato mixture, evenly distributing it over the fish.
  • Pour 1 additional tablespoon of olive oil over the mixture for added richness.

Cooking

  • Fold the parchment to cover the fish and bake for approximately 15 to 20 minutes.
  • After 20 minutes, uncover the dish, drain excess water, and raise the oven temperature to 400°F (200°C).
  • Continue to bake for another 5 minutes until the fish is cooked through.
  • Ensure the internal temperature of the fish reaches between 140°F and 145°F.
  • Take it out of the oven, plate, and enjoy the beautiful dish fresh!

Notes

For best flavor, use fresh herbs. Consider marinating the fish in olive oil and herbs for an hour before cooking for extra taste. Transform leftovers to fish tacos or seafood bowls.
