Preparation

  • Rinse and drain the black beans.
  • Prepare the corn if using fresh.
  • Dice the red bell pepper and cherry tomatoes into small pieces.
  • Chop the green onions and cilantro finely.

Mixing

  • In a large bowl, combine the black beans, corn, diced red bell pepper, cherry tomatoes, green onions, and cilantro.
  • In a small bowl, whisk together lime juice, olive oil, chili powder, and garlic powder to make the dressing.
  • Pour the dressing over the bean and vegetable mixture; toss well to coat evenly.

Serving

  • Let the mixture sit for at least 30 minutes to allow the flavors to meld.
  • Serve chilled or at room temperature with tortilla chips or as a topping on salads.
