  • 2 tablespoons Olive Oil For cooking the chicken.

Instructions
 

Preparation

  • Place the chicken breasts between two pieces of plastic wrap.
  • Gently pound them with a meat mallet or rolling pin until they are about ½ inch thick.
  • Season each side of the chicken lightly with salt and pepper.
  • Place a slice of prosciutto on each chicken breast, followed by 2 sage leaves.

Cooking

  • Heat the olive oil in a large skillet over medium heat.
  • Once hot, add the chicken, prosciutto side down, and cook for about 3-4 minutes until golden brown.
  • Flip the chicken carefully, and pour in the white wine, scraping the bottom of the skillet.
  • Continue cooking for an additional 5-7 minutes, allowing the sauce to reduce.

Serving

  • Remove the chicken from the skillet and place it on a serving platter.
  • Spoon some of the sauce over the top.
  • Garnish with extra fresh sage or a sprinkle of black pepper if desired.
  • Serve warm and enjoy!

Notes

Pound the chicken evenly for uniform cooking. Use dry white wine for best results. Always use fresh sage for maximum flavor. Keep warm in low oven if not serving immediately. Store leftovers separately.
