  • 2 pounds Beef chuck Cut into 1-inch pieces
  • 2 tablespoons Olive oil For sautéing
  • 1 large Onion Diced
  • 4 cloves Garlic Minced
  • 4 medium Carrots Peeled and sliced
  • 4 medium Potatoes Diced into bite-sized pieces
  • 4 cups Beef broth Or stock
  • 2 tablespoons Worcestershire sauce For umami flavor
  • 1 teaspoon Dried thyme For flavor enhancement
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste
  • 2 tablespoons Cornstarch Optional thickening agent

Instructions
 

Preparation

  • Cut the beef chuck into 1-inch pieces.
  • Dice the onion and mince the garlic.
  • Peel and slice the carrots and dice the potatoes.
  • Gather all other ingredients.

Cooking

  • Set your Instant Pot to ‘Sauté’ mode and heat the olive oil.
  • Add the diced onion and minced garlic. Sauté for 3-4 minutes until translucent.
  • Add the beef chunks, season with salt and pepper, and brown for 5-7 minutes.
  • Add the carrots, potatoes, beef broth, Worcestershire sauce, and thyme. Stir well.
  • Seal the lid and set the Instant Pot to ‘Manual’ mode for 35 minutes.
  • After cooking, allow the steam to naturally release for 10 minutes before quick-releasing any remaining pressure.

Serving

  • Carefully open the pot and stir the stew. If a thicker consistency is desired, mix cornstarch with a little water and stir it in.
  • Let it simmer on ‘Sauté’ mode for another 5 minutes until thickened.
  • Serve hot in bowls, garnishing with fresh herbs if desired.

Notes

Brown the beef in batches to prevent steaming. Store leftovers in airtight containers for meal prep. This stew freezes well for up to 3 months.
