Ingredients
  

For the Cake

  • 3 cups Unbleached All-Purpose Flour
  • 1 tsp Baking Soda
  • 1 tsp Table Salt
  • 1 tsp Ground Cinnamon
  • 1 tsp Allspice
  • 1 cup White Granulated Sugar
  • 1 cup Light Brown Sugar
  • 3 large Eggs Room temperature for better rise.
  • 1 cup Vegetable Oil
  • 1 tbsp Vanilla Extract
  • 1 cup Crushed Pineapple Drained
  • 2 cups Mashed Bananas
  • 1 cup Chopped Pecans

For the Frosting

  • 8 oz Cream Cheese Softened
  • 1/2 cup Unsalted Butter Softened
  • 4 cups Powdered Sugar
  • 1 tbsp Vanilla Extract For frosting
  • 1 tbsp Milk To achieve perfect consistency

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour three 9-inch round cake pans.
  • In a large bowl, sift and whisk together the flour, baking soda, salt, cinnamon, and allspice.
  • In another bowl, combine granulated sugar and brown sugar.
  • In a separate bowl, mix the eggs, oil, and vanilla extract until smooth.
  • Incorporate the mashed bananas and crushed pineapple.

Cooking

  • Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  • Fold in 1 cup of chopped pecans, distributing evenly.
  • Divide the batter equally among the prepared pans.
  • Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
  • Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Frosting & Serving

  • Beat the cream cheese and unsalted butter together until creamy.
  • Gradually add the powdered sugar and vanilla extract, mixing until smooth.
  • Once the cakes are cooled, spread the cream cheese frosting in between the layers and all over the top and sides.
  • Garnish with remaining pecans if desired.
  • Slice and serve. Enjoy the moist, flavorful cake!

Notes

Store leftovers in an airtight container for up to 5 days. For longer storage, freeze slices wrapped tightly for up to 3 months.
