Frosting Ingredients

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour three 9-inch round cake pans for easy removal.
  • In a large bowl, combine your dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg; mix well.
  • In another bowl, cream together the butter, oil, light brown sugar, and granulated sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  • Gently fold in mashed bananas, crushed pineapple, and pecans until just combined.

Cooking/Assembling

  • Divide batter evenly among prepared pans.
  • Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  • Let cakes cool in pans for 10 minutes, then transfer to a cooling rack.
  • While cooling, prepare the frosting by creaming together the cream cheese and butter until fluffy.
  • Gradually add powdered sugar and vanilla until smooth and creamy.

Serving

  • Once cakes are completely cool, place one layer on a serving platter.
  • Spread a layer of frosting over the top, then place the second layer on top.
  • Repeat with the third layer, and frost the top and sides of the cake as desired.
  • Garnish with extra chopped pecans or slices of banana if desired.
  • Slice and serve your heart-healthy Hummingbird Cake.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 5 days. You can also freeze the cake layers without frosting for up to 2 months.
