Preparation

  • Gather all your ingredients for a seamless cooking experience.
  • In a bowl, mix together the low-sodium soy sauce, pineapple juice, brown sugar, minced garlic, and grated ginger to create a flavorful marinade.
  • Place the chicken thighs in a large zip-top bag and pour the marinade over them. Seal the bag, ensuring all pieces are well-coated. Refrigerate for at least 30 minutes or up to overnight for deeper flavor.

Cooking

  • Preheat your grill or oven to 400°F (200°C).
  • Remove the chicken from the marinade and allow excess liquid to drip off. Discard any leftover marinade.
  • If grilling: Place chicken thighs on the grill and cook for about 6-7 minutes on each side until they reach an internal temperature of 165°F (74°C) and have beautiful grill marks.
  • If baking: Arrange chicken on a baking sheet lined with parchment paper and bake for 25-30 minutes, flipping halfway through, until golden brown and cooked through.

Serving

  • Once cooked, remove chicken from the grill or oven and let it rest on a chopping board for about 5 minutes.
  • Slice the chicken thighs for better presentation and to absorb any remaining juices.
  • Serve warm, garnished with sliced green onions, alongside your favorite sides like brown rice or a hearty vegetable salad.

Notes

For extra sweetness, add a splash of fresh pineapple juice just before serving. Try marinating the chicken overnight for a more intense flavor. A meat thermometer is a great tool for checking doneness—look for 165°F (74°C). Leftover chicken can be sliced and folded into salads or grain bowls for quick lunches.
