Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and dry the sweet potatoes, then poke holes in them using a fork.
  • Slice the onion and mince the garlic. Set aside.
  • Chop fresh parsley or cilantro and slice green onions for toppings.

Cooking and Assembly

  • Place the sweet potatoes on a baking sheet and drizzle with olive oil, and season with salt and pepper.
  • Bake in the preheated oven for about 30–35 minutes or until tender.
  • Heat remaining olive oil in a skillet over medium heat, add diced onions and sauté until translucent.
  • Stir in minced garlic and cook for an additional minute.
  • Add ground beef to the skillet, breaking it apart and cooking until browned, about 5–7 minutes.
  • Mix in hot honey, smoked paprika, ground cumin, and chili flakes, and stir until evenly coated and heated through.

Serving

  • Once sweet potatoes are fork-tender, let them cool for a couple of minutes.
  • Slice them open lengthwise and fluff the insides with a fork.
  • Scoop the hot honey ground beef mixture into each sweet potato boat.
  • Top with fresh herbs, sliced green onions, cheese or avocado slices, and drizzle with lime juice before serving.

Notes

For a lighter option, swap the beef with ground turkey or chicken. Bake sweet potatoes until fully tender for best texture. These boats are perfect for meal prep. Store leftovers in airtight containers for up to 3 days.
