Ingredients
  

For the Chicken

  • 2 pounds chicken thighs Tender, juicy pieces that absorb flavors during marination.
  • 1/4 cup coconut aminos A savory alternative to soy sauce that adds depth.
  • 2 tablespoons sriracha Adds a spicy kick, enhancing the overall flavor profile.
  • 1 teaspoon salt Elevates the taste of the chicken when marinated.
  • 1 cup tapioca flour Creates a crispy exterior for frying the chicken.
  • 2 tablespoons honey Provides sweetness, balancing the heat of the sriracha.
  • 2 cloves garlic Adds aroma and flavor depth to the sauce.
  • 1 tablespoon rice vinegar Adds a tangy touch, brightening the sauce.
  • 2 tablespoons starch Helps in coating the chicken for crispiness.
  • 2 tablespoons cooking oil Necessary for frying the chicken to a golden finish.

Instructions
 

Preparation

  • In a medium to large bowl, add cubed chicken along with coconut aminos, sriracha, and salt to taste. Cover and let it marinate for at least 30 minutes.
  • Add 1 cup of starch to a big Ziploc bag, then add the marinated chicken. Close the bag and shake continuously to separate the pieces and coat them evenly in starch.
  • In a medium-sized bowl, whisk together all the ingredients for the honey sriracha sauce and set aside.

Cooking

  • In a large non-stick pan, add cooking oil to cover the bottom. Heat the oil on medium to high heat until slightly shimmering.
  • Add the flour-coated chicken pieces one or two at a time, avoiding dumping them all at once. Cook for about 30 to 45 seconds or until golden brown, then flip and cook the other side.
  • Once all the chicken pieces are cooked (165°F internal temperature) and golden brown, slowly pour in the sauce. Stir to combine, allowing the sauce to thicken and become sticky.
  • Remove from heat, serve, and enjoy!

Notes

Try marinating the chicken overnight for a deeper flavor infusion and adjust the spice level by modifying the amount of sriracha used.
