For the Chicken

Instructions
 

Preparation

  • In a bowl, combine honey, lime juice, olive oil, salt, and pepper. Whisk until well blended.
  • Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  • Prepare the mango salsa by dicing the mango, chopping the red onion, and mincing the jalapeño if using. In a separate bowl, mix the mango, onion, cilantro, and an additional tablespoon of lime juice. Set aside.

Cooking

  • Preheat your grill to medium-high heat (around 375°F or 190°C).
  • Remove the chicken from the marinade, discarding any excess marinade. Place the chicken on the grill and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  • Brush a little leftover marinade onto the chicken during the last few minutes of cooking for added flavor.

Serving

  • Once the chicken is cooked, remove it from the grill and let it rest for 5 minutes.
  • Slice the chicken breast and top it generously with the prepared mango salsa.
  • Serve warm, garnished with additional cilantro if desired.

Notes

Marinating longer enhances flavor. Use ripe mango and fresh herbs for best results. Chicken thighs can be substituted for juicier meat.
