Ingredients
  

For the Chicken Marinade

  • 4 pieces Boneless skinless chicken breasts A lean source of protein

For the Mango Salsa

  • 1 large Mango Lends sweetness
  • 1/2 small Red onion Finely chopped
  • 1 small Jalapeño Optional for heat
  • 1/4 cup Cilantro Fresh and herbal
  • 1 tablespoon Extra lime juice Brightens the salsa
  • 1/4 teaspoon Salt Season to taste
  • 1/4 teaspoon Black pepper Season to taste

Preparation

  • Begin by marinating the chicken. In a bowl, mix the honey, lime juice, lime zest, olive oil, minced garlic, cumin, smoked paprika, salt, and pepper.
  • Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over the chicken. Ensure it's well coated. Let it marinate for at least 30 minutes in the fridge (or up to 4 hours for deeper flavor).
  • While the chicken marinates, prepare the mango salsa. Dice the mango, finely chop the red onion, and if using, seed and mince the jalapeño. Combine these with cilantro and lime juice in a bowl. Season with salt and pepper to taste.

Cook/Assemble

  • Preheat your grill or air fryer to 375°F (190°C).
  • Once preheated, remove the chicken from the marinade and let excess marinade drip off. Place the chicken on the grill or in the air fryer.
  • Cook the chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F (74°C). The chicken should achieve a golden brown exterior.

Serve

  • Once cooked, remove the chicken from the heat and allow it to rest for 5 minutes.
  • Slice the chicken into strips or serve whole. Plate it alongside the vibrant mango salsa.
  • For a full experience, serve with a side of quinoa or in lettuce wraps.

Notes

Let the chicken marinate longer for deeper flavor. Store any leftover salsa in a sealed container; it stays fresh up to 2 days.
