Instructions
 

Preparation

  • In a medium bowl, combine honey, lime juice, minced garlic, olive oil, salt, and pepper to create the marinade.
  • Add the chicken breasts to the marinade and ensure they are thoroughly coated. Cover and let them marinate for at least 30 minutes.
  • While the chicken is marinating, prepare the mango salsa by dicing the fresh mango, red onion, and chopping the cilantro.
  • In a separate bowl, mix the diced mango, onion, cilantro, lime juice, salt, and pepper together.

Cooking

  • Preheat your grill or skillet over medium-high heat.
  • Remove the chicken from the marinade and let any excess drip off.
  • Cook the chicken for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.

Serving

  • Let the chicken rest for a few minutes before slicing.
  • Plate the sliced chicken and top generously with the mango salsa.
  • Serve immediately with your favorite sides, such as brown rice or a mixed greens salad.

Notes

For extra flavor, let the chicken marinate longer—up to 2 hours if you have the time. Store leftover salsa separately in the fridge to maintain freshness.
