Cooking

  • Spread the carrots on a large baking sheet in a single layer.
  • Drizzle the honey mixture over the carrots, ensuring they are evenly coated with the glaze.
  • Toss the carrots gently to ensure they are fully coated and spread them out once again for even cooking.
  • Roast in the preheated oven for 20-25 minutes, turning halfway through, until they are tender and caramelized, looking for a golden-brown color.

Serving

  • Once cooked, remove the carrots from the oven and immediately toss them with butter until melted.
  • Sprinkle crumbled feta cheese over the hot carrots, followed by finely chopped pistachios for crunch.

Notes

For extra flavor, marinate the carrots in the honey mixture for 30 minutes before roasting. If you prefer a milder sweetness, substitute half of the hot honey with regular honey.
