  • 2 medium Sweet Potatoes Peeled and cut into bite-sized cubes.
  • 2 cups Broccoli Chopped into florets.
  • 1/4 cup Honey Provides a sweet glaze.
  • 4 cloves Garlic Mince for added flavor.
  • 2 tablespoons Olive Oil For roasting.
  • 1 teaspoon Salt Essential for seasoning.
  • 1/2 teaspoon Black Pepper Essential for seasoning.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and peel the sweet potatoes, then cut them into bite-sized cubes.
  • Chop the broccoli into florets, and slice the sausage into rounds or keep whole.
  • Mince the garlic and set aside.

Cooking

  • On a large sheet pan, toss the sweet potatoes with olive oil, salt, and pepper.
  • Roast for 15 minutes.
  • Add the broccoli and sausage, drizzle with honey and garlic, then toss to combine.
  • Return to the oven and roast for an additional 20-25 minutes, until everything is golden and tender.

Serving

  • Once cooked, take it out of the oven and give everything another gentle toss to mix the flavors.
  • Serve warm, garnished with fresh herbs if desired.

Notes

Can be made ahead of time and stored in the fridge or frozen for later. Add fresh herbs or lemon for added flavor.
