Preparation

  • Begin by gathering all ingredients.
  • In a blender, combine ketchup, chipotle peppers, apple cider vinegar, light brown sugar, Worcestershire sauce, honey, salt, garlic powder, cumin, and black pepper.
  • Blend until smooth, adjusting seasoning as necessary.
  • Place the chicken in a large bowl and pour half of the marinade over, reserving the other half for basting during cooking.
  • Cover and let it marinate for at least 15 minutes, or overnight in the refrigerator for deeper flavors.

Cooking

  • Preheat your grill or air fryer to 375°F (190°C).
  • If using a grill, oil the grates and place the chicken directly on them. Cook for about 6-7 minutes on each side until internal temperature reaches 165°F (75°C).
  • If using an air fryer, arrange the chicken in a single layer and cook for approximately 15 minutes, flipping halfway.
  • Baste the chicken with the reserved marinade for extra flavor during the last few minutes of cooking.

Serving

  • Once cooked through, remove the chicken from the grill or air fryer. Let it rest for 5 minutes to retain moisture.
  • Slice or shred as desired.

Notes

For deeper flavor, marinate the chicken for up to 24 hours. Store leftovers in an airtight container in the fridge for up to 4 days.
