Preparation

  • Preheat your oven to 400°F (204°C).
  • Rinse the chicken thighs under cold water and pat them dry with a paper towel.
  • Season the chicken thighs generously with salt and pepper.
  • Chop your vegetables into bite-sized pieces.
  • Cook the rice according to package instructions.

Cooking

  • In a large bowl, mix together the honey and BBQ sauce until well combined.
  • Place the seasoned chicken thighs in a baking dish and pour the honey BBQ mixture over them.
  • Add the chopped vegetables around the chicken in the baking dish.
  • Bake the chicken for 30-35 minutes until cooked through with a caramelized glaze.
  • Stir the vegetables halfway through cooking.

Serving

  • Remove from the oven and let the dish rest for 5 minutes.
