  • 1 lb Chicken breast Juicy and tender, cut into bite-sized pieces.
  • 1 cup Long grain rice Rinsed under cold water.
  • 1/2 cup BBQ sauce Sweet and tangy flavor.
  • 2 tbsp Honey Adds natural sweetness.
  • 1 cup Chicken broth or water For cooking the rice.
  • to taste Salt and pepper For seasoning.
  • 1/4 cup Chopped green onions Optional garnish.

Instructions
 

Preparation

  • Cut the chicken breast into bite-sized pieces.
  • Rinse the rice under cold water until the water runs clear.
  • Gather honey, BBQ sauce, chicken broth, salt, and pepper.

Cooking

  • In a large pot, heat a splash of water or broth over medium heat.
  • Add the chicken pieces and cook for 5-7 minutes until browned.
  • Stir in the BBQ sauce and honey, simmer for 2 minutes.
  • Add in the rinsed rice and mix well.
  • Pour in the chicken broth or water, season with salt and pepper.
  • Bring to a boil, then reduce to low heat, cover, and cook for 15-20 minutes.

Serving

  • Remove from heat and let sit for 5 minutes covered.
  • Fluff the rice with a fork and garnish with green onions.
  • Serve on plates and enjoy!

Notes

Meal-prep friendly; store leftovers in airtight containers for up to 4 days. Can freeze for up to 2 months.
