Instructions
 

Preparation

  • Gather all your ingredients on a clean and spacious countertop.
  • Dice the chicken thighs into bite-sized pieces.
  • Rinse the long-grain rice under cold water until the water runs clear.
  • Measure out your mixed vegetables if using.

Cooking

  • In a large skillet, heat a drizzle of oil over medium heat.
  • Add the diced chicken thighs and season with salt, pepper, garlic powder, onion powder, and smoked paprika. Sauté for about 5-7 minutes until golden brown.
  • Pour in BBQ sauce and honey, stir well to coat the chicken evenly, and simmer for another 3-4 minutes.
  • In a separate pot, bring chicken broth to a boil. Add the rinsed rice and stir.
  • Reduce to a simmer, cover, and cook for about 18 minutes or until liquid is absorbed and rice is tender.

Serving

  • Fluff the rice gently with a fork, and fold in the chicken mixture along with any mixed vegetables.
  • Let everything cool for a minute before serving hot.
  • Garnish with chopped green onions and enjoy.

Notes

For more flavor, marinate the chicken in BBQ sauce and honey for at least 30 minutes before cooking. Store leftovers in an airtight container for up to 3 days. You can freeze the chicken rice for up to 3 months.
