Preparation

  • Gather all your ingredients.
  • Dice the chicken thighs or breasts into bite-sized pieces.
  • Measure out the rice and broth.

Cooking

  • Heat a large skillet over medium heat.
  • Add the chicken and cook until it’s golden brown, about 5-7 minutes.
  • Stir in the garlic powder, onion powder, and smoked paprika.
  • Pour in the rice, chicken broth, BBQ sauce, and honey. Mix well.
  • Add mixed vegetables and stir again.
  • Bring the mixture to a simmer, cover, and cook for about 20 minutes or until rice is tender.

Serving

  • Once cooked, remove from heat.
  • Fluff the rice with a fork and season with salt and pepper to taste.
