Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the carrots, then cut each carrot in half lengthwise.
  • Minced garlic if using fresh cloves. If using garlic powder, have that ready.
  • Line a baking sheet with parchment paper.

Cooking

  • In a large mixing bowl, combine the carrots with balsamic vinegar, olive oil, honey, and minced garlic. Season with salt and pepper to taste.
  • Toss the carrots until they are well-coated with the mixture.
  • Spread the carrots in a single layer on the prepared baking sheet.
  • Roast in the oven for 20-25 minutes, stirring halfway through.

Serving

  • Once the carrots are finished roasting, let them cool for a few minutes.
  • Taste and adjust seasoning if necessary.
  • Transfer to a serving dish and garnish with freshly chopped parsley.
  • Serve warm and enjoy!

Notes

Store leftovers in an airtight container for up to 4 days. For longer storage, freeze for up to 3 months. Reheat in the oven or microwave before serving.
