  • 3 large egg yolks Creates a luscious texture.

Preparation

  • Beat the egg yolks in a heat-proof bowl until well mixed and set aside.
  • In a saucepan, whisk together cornstarch and a portion of the milk.
  • Add the remaining milk, sugar, and salt, whisking until thoroughly combined.

Cooking

  • Place the saucepan over medium-high heat, continuously whisking until the mixture reaches a boiling point.
  • Once boiling, remove the saucepan from heat and slowly pour the hot milk mixture into the egg yolks while whisking to blend well.
  • Pour the combined mixture back into the saucepan and heat gently over medium to medium-high heat, whisking constantly for 2-3 minutes until the pudding thickens.
  • Remove from heat, whisk in the butter and vanilla until fully incorporated.
  • Let the pudding cool for 5 minutes before pouring it into serving dishes. Chill for at least one hour before serving.

Notes

For best flavor, use fresh vanilla bean paste or high-quality vanilla extract. Whisk constantly while cooking to prevent lumps. Allow sufficient chilling time for optimal texture and flavor.
