Preparation

  • Gather all your ingredients: bell peppers, apple cider vinegar, sugar, pectin, salt, and optional chili flakes.
  • Wash and finely chop the bell peppers into small pieces.
  • Measure out your sugar and mix it with the pectin in a separate bowl.

Cooking

  • In a large pot, combine the chopped bell peppers, apple cider vinegar, and salt.
  • Bring the mixture to a boil over medium heat, stirring consistently until the peppers soften, about 10 minutes.
  • Add the sugar and pectin mixture to the pot, stirring well. Bring to a rolling boil for 1-2 minutes.
  • If using, stir in chili flakes for additional heat.

Cooling and Storing

  • Remove the pot from heat and let the jam cool for about 10 minutes.
  • Transfer the cooled jam into sterilized jars, sealing them tightly.
  • For optimal flavor, allow the jam to set for at least 24 hours in the refrigerator before using.
