Ingredients

Main Ingredients

  • 4 or Oranges (unwaxed, organic) Ensure they are high quality to avoid wax altering the flavor.
  • 500 grams Sugar (white granulated, raw or brown) Adjust sweetness to taste.
  • 120 ml Lemon juice (freshly squeezed or bottled) Adds acidity and brightness.

Instructions

Preparation

  • Wash the oranges with baking soda and pat dry.
  • Cut the oranges in half and remove seeds. Squeeze out juice and scoop out pulp, discarding pith and seeds.
  • Combine juice and pulp to total 500 grams.
  • Julienne the orange rind or cut into thin strips (about 60 grams).
  • Mix sugar and lemon juice with the fruit mixture and let sit for 15 minutes.

Cooking

  • Cook the mixture over low heat in a heavy saucepan, stirring regularly.
  • After 20 minutes, check consistency by spreading a spoonful on a plate. If it holds a sticky texture, it’s ready.
  • Allow it to cool before pouring into sterilized jars.

Notes

Serve on warm buttermilk biscuits or swirl into yogurt. Store in sterilized jars in a cool, dark place. Experiment with other citrus fruits for variations.
