For the Dough

  • 2 cups All-Purpose Flour Essential for a flaky crust.

For Ensuring Flakiness

Instructions
 

Phase 1 – Prep

  • In a large bowl, mix the flour, salt, sugar, curry powder, and turmeric until well combined.
  • Add the cold butter cubes into the flour mixture. Using your fingers, work the butter into the flour until it resembles coarse crumbs.
  • Gradually add water, mixing until the dough forms a ball. Cover with plastic wrap and refrigerate for at least 30 minutes.

Phase 2 – Cook/Assemble

  • While the dough chills, heat olive oil in a skillet over medium heat. Add minced garlic, ginger, and diced onions, cooking until the onions turn translucent.
  • Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, seasoning with salt, pepper, scotch bonnet pepper, and better than bouillon.
  • Stir in the browning sauce, parsley, and sugar, mixing well. Allow the filling to cool for a few minutes.
  • Preheat your oven to 400°F (200°C).

Phase 3 – Serve

  • Roll out the chilled dough on a floured surface until about 1/8 inch thick. Cut into circles using a large cookie cutter.
  • Place a spoonful of the beef mixture in the center of each circle. Fold the dough over to create a half-moon shape, sealing the edges with a fork.
  • Place the patties on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until golden brown.
  • Enjoy the patties warm; they are an excellent meal prep item that can be cooked in batches.

Notes

Keep your butter cold for the flakiest crust. Experiment with adding different spices to the beef mixture for a flavor twist. Use an egg wash for an extra shiny crust. Consider freezing the uncooked patties for a quick meal option later.
