  • 1/4 teaspoon salt Enhances the chocolate flavor while balancing sweetness.
  • 4 ounces dark chocolate Intensifies the chocolate flavor and contributes to a smooth texture.

Preparation

  • In a small bowl, sift together the cocoa and cornstarch.
  • Whisk this mixture into the milk.
  • In a saucepan, heat the milk and cream until hot but not boiling.
  • Whisk in the sugar, cocoa, cornstarch, and salt.
  • Add the chopped chocolate and stir until smooth.
  • Allow the mixture to cool, stirring well.
  • Pour into popsicle molds and freeze for 4-5 hours or overnight.
  • Store in molds for up to one week or wrapped individually in plastic wrap for up to 4 weeks.

Notes

For an extra chocolatey kick, consider adding more dark chocolate. Experiment with flavor by adding vanilla extract or cinnamon. Ensure the milk and cream mixture doesn’t boil to maintain texture. Let the fudgesicles thaw for a few minutes before removing from molds for easier release.
