Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and dice sweet potatoes into small cubes for even cooking.
  • In a large bowl, combine ground beef, sweet potatoes, salt, and pepper. Drizzle with olive oil and mix thoroughly.
  • Spread the mixture evenly on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 20-25 minutes, or until the sweet potatoes are tender and the beef is cooked through.

Cooking and Assembly

  • Once cooked, remove the sheet pan from the oven and let it cool slightly.
  • In a separate bowl, beat the eggs and mix in the cottage cheese until well combined.
  • Pour the egg mixture over the beef and sweet potato mix. Gently stir to ensure even distribution.
  • Return the pan to the oven and bake for an additional 10-12 minutes until the eggs are set.
  • Remove the pan from the oven, let cool for a few minutes, and then slice into portions.

Serving

  • Take a tortilla and place a portion of the filling in the center.
  • Fold the sides of the tortilla inwards, then roll from the bottom to secure the filling.
