Preparation

  • Gather all ingredients: ensure you have shredded rotisserie chicken, pasta, broccoli, cheeses, garlic, and cream.
  • Bring a large pot of salted water to a boil over high heat for cooking the penne pasta.
  • Chop the broccoli into bite-sized pieces to ensure even cooking.
  • Mince the garlic finely to release its aromatic oils.

Cooking

  • Add the penne pasta to the boiling water. Cook according to package instructions until al dente, around 8-10 minutes.
  • In the last 2-3 minutes of pasta cooking, add the chopped broccoli to the pot to blanch it.
  • Once done, drain the pasta and broccoli, reserving a little pasta water for later.
  • In a large skillet over medium heat, melt a tablespoon of heavy cream and add minced garlic, sautéing until fragrant (about 1-2 minutes).
  • Add the heavy cream to the skillet, and allow it to simmer for about 3-4 minutes until it thickens slightly.
  • Stir in the shredded chicken and cooked pasta, mixing until well combined.
  • Fold in the Parmesan and mozzarella cheeses until melted and creamy. Adjust with reserved pasta water to reach desired consistency.

Serving

  • Remove from heat; season with salt and pepper to taste.
  • Plate the pasta into serving bowls or a large family dish.

Notes
