Ingredients
  

For the Egg White Bites

  • 12 large Egg Whites A lean source of protein.
  • 1 cup Diced Vegetables (bell peppers, spinach, or onions) Add any preferred veggies.
  • 1 cup Shredded Cheese (cheddar or feta) Provides creaminess.
  • 1 teaspoon Salt For enhancing flavors.
  • 1 teaspoon Pepper For seasoning.
  • 1 cup Optional Cooked Meat (turkey or beef bacon) For additional flavor and protein.

Preparation

  • Preheat your oven to 350°F (175°C). Grease a muffin tin lightly.
  • Dice your chosen vegetables into small pieces.
  • Shred your cheese if using block cheese.
  • If using, chop any cooked meat into small bits.

Cooking

  • In a mixing bowl, combine the egg whites, diced vegetables, shredded cheese, and optional meat.
  • Season the mixture with salt and pepper.
  • Pour the mixture into the muffin tin, filling each compartment about ¾ full.
  • Bake for 20-25 minutes until set and golden on top.

Serving

  • Allow the bites to cool for a few minutes and lift them from the muffin tin with a spatula.
  • Serve warm, garnished with fresh herbs or yogurt if desired.

Notes

Consider experimenting with different vegetables and cheeses. Use a silicone muffin tray for easy removal. These bites can be meal prepped and stored in the fridge for several days, or frozen for up to 3 months.
