Ingredients
  

For the stew

  • 2 tablespoons olive oil
  • 2 pounds beef stew meat Look for well-marbled cuts for flavor.
  • 1 onion, chopped A sweet onion adds nice depth.
  • 3 carrots, diced Preferably organic for a sweeter taste.
  • 2 celery stalks, diced
  • 3 cloves garlic, minced Fresh garlic enhances the aroma.
  • 2 tablespoons flour For thickening the stew later.
  • 2 tablespoons tomato paste Adds richness and depth of flavor.
  • 4 cups beef broth Homemade will provide the best flavor.
  • 1 tablespoon Worcestershire sauce Optional, but it adds great umami.
  • 2 bay leaves Remove before serving.
  • 1 teaspoon thyme Fresh or dried works here.
  • 3 cups baby potatoes, halved They add texture and heartiness.
  • 1 cup green peas Fresh or frozen both work.
  • Salt and pepper to taste To brighten all the flavors.
  • Fresh parsley, chopped for garnish and freshness.

Instructions
 

Preparation

  • Start by heating 2 tablespoons of olive oil in your Dutch oven over medium-high heat.
  • Season 2 pounds of beef stew meat with salt and pepper, then brown it in batches until each piece has a golden crust.
  • Add 1 chopped onion, 3 diced carrots, and 2 diced celery stalks to the pot. Cook until softened.
  • Stir in 3 minced garlic cloves until fragrant. Then sprinkle in 2 tablespoons flour and mix.
  • Add 2 tablespoons tomato paste and cook for 1 minute.
  • Pour in 4 cups beef broth, add 1 tablespoon Worcestershire sauce, 2 bay leaves, and 1 teaspoon thyme.
  • Let it come to a simmer, then return the beef to the pot and add 3 cups halved baby potatoes.
  • Bring to a boil, then reduce to a gentle simmer.
  • Cover and cook for 1½ to 2 hours.
  • Just before serving, stir in 1 cup of green peas and remove the bay leaves. Garnish with chopped parsley.

Notes

This stew is perfect for meal prep and can be stored in the fridge for up to 3 days or frozen for 3 months. You can add different veggies or lentils based on what’s in season. Serve with crusty bread or over rice.
