Instructions
 

Preparation

  • Preheat your oven to 325°F (165°C).
  • Remove the giblets and neck from inside the turkey.
  • Pat the turkey dry with paper towels to ensure crispy skin.
  • In a bowl, combine softened butter, chopped rosemary, sage, thyme, and minced garlic.
  • Gently slide your hand under the skin of the turkey, creating pockets to insert the herb butter.
  • Spread some of the remaining herb butter all over the turkey’s skin.
  • Season generously with salt and pepper.
  • Stuff the cavity with quartered lemons and onions for added flavor.

Cooking

  • Place the prepared turkey on a roasting rack in a large roasting pan.
  • Roast in the preheated oven for 2.5 to 3 hours, or until the internal temperature reaches 165°F (74°C).
  • Use a meat thermometer inserted into the thickest part of the thigh for accuracy.
  • Baste with the juices every 30 minutes, ensuring that the skin stays golden and crispy.
  • Cover the turkey loosely with foil if it browns too quickly.

Serving

  • Once done, remove the turkey from the oven and let it rest for 20 minutes before carving.
  • This resting period allows the juices to redistribute, ensuring moist slices.
  • Carve the turkey, serving dark and white meat as desired.
  • Drizzle some of the drippings over the turkey for extra flavor.
  • Garnish with additional fresh herbs if desired.

Notes

Use a fresh turkey for the best flavor and texture. For extra flavor, try adding citrus slices in the cavity along with the lemon. Brine the turkey overnight for an even juicier result.
