  • 1 teaspoon Chili powder Adds spice and flavor complexity.
  • 1/4 cup Water or vegetable broth Helps combine all ingredients.
  • 1 cup Cooked white rice Creates a hearty texture.
  • 1/4 cup Cilantro Brightens up the dish.
  • 1 tablespoon Lime juice Adds tangy goodness.
  • 1 cup Shredded Monterey Jack or cheddar cheese Melts beautifully.

Instructions
 

Preparation

  • Chop the onion and mince the garlic. Set aside.
  • Drain and rinse the black beans, then place them in a mixing bowl.
  • Prepare the cilantro and lime juice.
  • Cook your white rice according to package instructions if not already done.

Cooking and Assembly

  • In a large skillet, heat the olive oil over medium heat.
  • Add the chopped onion and sauté for about 3-4 minutes until translucent.
  • Stir in the minced garlic and cook for an additional minute.
  • Add the black beans, ground cumin, chili powder, and water or broth, mixing everything well.
  • Allow the mixture to simmer for about 5 minutes, then remove from heat.
  • In a separate bowl, combine the cooked white rice, cilantro, and lime juice.
  • To assemble, lay out a flour tortilla, add a scoop of the black bean mixture, and top with a scoop of cilantro-lime rice and shredded cheese.

Serving

  • Fold the tortilla over the filling, tucking in the sides to create a burrito shape.
  • Place the filled burrito seam-side down in the skillet over medium heat.
  • Cook each side for about 2-3 minutes until golden brown and crispy.
  • Slice in half, serve warm, and enjoy with your favorite toppings!

Notes

For extra crunch, sear the burritos in a hot skillet after assembling. You can freeze these burritos for up to 3 months. Reheat in the oven or microwave before serving.
