Ingredients
  

Main Ingredients

  • 1 lb Ground Beef Can be swapped with turkey or lentils.
  • 1 medium Onion, Chopped Shallots or leeks can also work.
  • 2 cloves Garlic, Minced Fresh is best, but garlic powder can be used.
  • 1 14.5 oz can Diced Tomatoes Fresh tomatoes or tomato puree can also be used.
  • 4 cups Beef Broth Vegetable broth is a great vegetarian option.
  • 1 cup White Rice Brown rice may require more cooking time.

Spices and Seasoning

  • 1 teaspoon Dried Oregano Basil or thyme can be interchangeable.
  • to taste Salt and Pepper Adjust to your preference.

Garnish

  • to taste Fresh Parsley Can be replaced with cilantro or chives.

Instructions
 

Preparation

  • Gather all your ingredients and dice the onion and garlic.
  • Measure out the rice and broth, so everything is ready to go.

Cooking

  • In a large pot, brown the ground beef over medium heat until fully cooked.
  • Add the chopped onion and minced garlic; sauté until the onion is translucent.
  • Stir in the diced tomatoes, beef broth, oregano, and bring to a boil.
  • Once boiling, add the rice and reduce the heat; let it simmer for about 15 minutes.

Serving

  • Once the rice is tender, taste and adjust seasoning with salt and pepper.
  • Ladle into bowls and sprinkle fresh parsley on top for an extra touch.
  • Enjoy warm with crusty bread or a light salad.

Notes

This soup is excellent for meal prep. Store leftovers in airtight containers for up to 3-4 days in the fridge. Can be frozen for up to 3 months.
