Egg Mixture

  • 6 large large eggs The base of your frittata, providing a fluffy texture.
  • 1/4 cup milk Adds creaminess without overpowering.

Vegetables

  • 1 cup chopped vegetables (bell peppers, spinach, onions) Bring color and flavor.

Cheese

  • 1/2 cup shredded cheese (Cheddar or feta) Adds richness and depth.

  • 1 tablespoon olive oil Prevents sticking and adds flavor.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together the eggs, milk, salt, and pepper until well-blended.
  • Chop your chosen vegetables, aiming for around 1 cup total, keeping pieces roughly the same size for even cooking.
  • Grate your cheese, if not pre-shredded.

Cooking

  • Heat olive oil in a large oven-safe skillet over medium heat.
  • Add the chopped vegetables and sauté until tender, about 5-7 minutes.
  • Spread the vegetables evenly in the skillet and pour the egg mixture over them, stirring gently.
  • Sprinkle the cheese evenly on top.
  • Cook for about 3-4 minutes, or until the edges start to set.

Baking

  • Transfer the skillet to the oven and bake for 15-20 minutes, until the frittata is puffed and golden brown.
  • Remove from the oven and let it sit for a couple of minutes.
  • Slice into wedges and serve warm!

Notes

Perfect for meal prep. Store leftovers in an airtight container in the fridge for up to 3 days. Optionally, can freeze for up to 2 months.
