Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a baking dish or line it with parchment paper.
  • Grate the zucchini and carrots, and place them in a large mixing bowl.
  • Beat the eggs in a separate bowl and set aside.

Cooking

  • In the bowl with the grated vegetables, add the beaten eggs and mix well.
  • Incorporate the whole wheat flour, baking powder, and grated cheese, stirring until combined.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Bake in the preheated oven for about 25-30 minutes or until the top is golden brown.

Serving

  • Remove from the oven and let it cool slightly.
  • Cut into squares and serve warm or at room temperature.
