Preparation

  • Line a baking dish with parchment paper, leaving some overhang for easy removal.
  • Cook sweet potatoes until soft; then mash or puree them until smooth.

Cooking

  • In a large mixing bowl, combine the mashed sweet potato and almond butter until smooth.
  • Add the eggs, maple syrup, and vanilla extract, mixing well.
  • Gradually stir in the cocoa powder, baking soda, cinnamon, and salt until just combined.
  • Fold in the chocolate chips, reserving some for topping.

Baking

  • Pour the batter into your prepared baking dish, spreading it evenly.
  • Bake for 25-30 minutes or until the edges look set and a toothpick comes out clean.
  • Let them cool for a few minutes before lifting them out using the parchment paper. Slice into squares and enjoy!
