  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon ground cumin for flavor
  • 1 teaspoon chili powder for flavor kick

  • 4 large whole wheat tortillas wraps everything together

Preparation

  • Gather all ingredients and necessary cooking equipment, including a non-stick skillet and mixing bowl.
  • Dice the red bell pepper and onion finely, and chop the fresh baby spinach. Set aside.
  • Beat the eggs in a bowl with salt and pepper until well mixed.
  • Prepare your tortillas by warming them slightly to make them pliable.

Cooking and Assembly

  • In a non-stick skillet, heat the olive oil over medium heat (about 350°F or 175°C).
  • Add the chopped onion and red bell pepper to the skillet. Sauté until the onion is translucent, about 3–4 minutes.
  • Stir in the spinach until wilted, then add the drained black beans, cumin, and chili powder. Cook for another 2–3 minutes.
  • Pour in the beaten eggs, allowing them to cook undisturbed for a minute. Then gently stir until fully cooked and scrambled.
  • Remove from heat and stir in half of the cheese until melted.

Serving

  • Place a generous scoop of the egg mixture in the center of each tortilla.
  • Add slices or a dollop of mashed avocado and sprinkle with remaining cheese.
  • Fold in the sides of the tortilla and roll it up to secure the filling.
  • Serve warm with salsa on the side for dipping.

Notes

Meal prep friendly: make in batches and freeze. For extra flavor, try roasting the vegetables before adding them to the burrito.
