Instructions
 

Preparation

  • Gather all your ingredients on a clean surface.
  • Grate the garlic, fresh ginger, and horseradish root. The finer they are, the more flavor they release.
  • Wash and slice the scallion thinly for garnish.

Cooking

  • In a large pot, heat the avocado oil over medium heat.
  • Add the grated garlic, ginger, and horseradish. Sauté briefly until fragrant, stirring constantly.
  • Pour in 8 cups of water and bring to a gentle boil.
  • Stir in the white or light miso paste until dissolved.
  • Add the turmeric, sea salt, and apple cider vinegar.
  • Let the mixture reduce to a simmer for about 20 minutes to enhance the flavors.

Serving

  • Once cooked, remove the pot from heat and add lemon juice and optional zest for brightness.
  • Taste for seasoning, adjusting salt or vinegar as desired.
  • Serve hot, garnished with sliced scallions for a fresh finish.
